Creamy Cauliflower Soup

OK, so I saw some organic cauliflower in the store and said, "Hmm, I haven't had cauliflower for a while" so I bought it. But, honestly, other than dipping it in ranch dressing, I know nothing about eating or preparing it. I had a recipe LONG ago for a really good cauliflower casserole/soupy thing that was really good. However, I have long since lost it and have no idea what was in it aside from....cauliflower. SO I experimented after reading about 20 different soup recipes (yes, I am exaggerating) and came up with this. Let me know what you think! Tony and I really enjoyed it   --  we don't have anyone else in the house that eats cauliflower or broccoli at this point. 

Ingredients:
1 head fresh organic cauliflower, cleaned and chopped
fresh organic broccoli (optional -- it makes this more of a broccoli soup)
pint of heavy cream or half n half
1/2 purple onion, chopped or pureed
3 cloves of garlic, pressed 
4 cups of chicken broth
2 t sea salt
1 stick of organic butter

Spray a soup pot and then toss in the butter to melt. Add onion and garlic, saute until "fluffy"...(trust me, it just looks fluffy). Add chicken broth, cauliflower, broccoli if desired, and sea salt. If cauliflower isn't covered in liquid, add some filtered water. Bring to a boil, cover and reduce flame...allow to boil slowly until cauliflower is softened. Add cream, turn off. Enjoy!!!
