Rich, Creamy Potato Soup
- I love recipes that are easy, require little preparation, and especially have few ingredients. To me, the fewer the better!
This is deliciously creamy and whenever we serve it we have many requests for the recipe, which is a combo from a couple great recipes. I probably serve this once a week in our home in the fall and winter months because the organic ingredients called for are easy to come by that time of year. Many of my soup recipes are modified versions from www.heartofnewengland.com or www.passionatehomemaking.com.
Creamy Potato Soup
8-10 medium potatoes, peeled and diced
1 pint organic heavy cream
4 cups chicken broth or stock (homemade is best because it has soooo many wonderful nutrients and healing properties -- but if I am out of it I will usually use Wolfgang Puck's low sodium, free range broth)
1 onion pureed (food processor)
1/2 stick organic grass fed butter butter
sea salt to taste
Melt butter in soup pot, be sure not to let brown Add onion and saute until onoins look "fluffy". Add in potatoes and broth plus 1 cup of water so potaotes are covered. Cover and let cook at a slow boil until potatoes easily mash with a fork.
Mash potatoes down while still in pot with a stainless steal ladel bottom (be creative, this works great for me). Add cream and stir, reduce heat to very low 5 minutes or so. Add salt to taste.
